Tustin’s brewery is a 14 barrel system, which means we can brew 434 gallons of beer at one time. Hot water is mixed with crushed barley malt
in the Mash Tun (the mixture is called mash). The mash is allowed to rest while natural enzymes break the malted barley starches down into sugars.
The sweet liquid created is strained through the false bottom of the Mash Tun, leaving the spent grain behind. The sweet liquid, called Wort, is pumped
into the Brew Kettle and is boiled for 1.5 hours. During the boil, hops are added for aroma, bitterness and flavor. After the wort is boiled, it is cooled,
and oxygen is added to help the yeast ferment the beer. Then it is pumped into one of four Fermenters where brewers yeast is added. Once the yeast
is added, the wort is called beer. The beer ferments for 10 to 14 days. During fermentation, the yeast eats the barley sugars creating carbon dioxide
and alcohol. The alcohol level is a direct result of how much malted barley is used. When fermentation is complete, and the beer is aged, it is ready
to be filtered. Once the beer is filtered, it is transferred to one of 5 Serving Tanks in a walk-in cooler. It is from these serving tanks that Tustin beer
is served straight into your glass. |
